Walnut Biscotti

Makes 2 dozen

These nutty biscotti are a perfect pairing for coffee; try one with your morning brew or serve to guests after dinner.

What you need:

  • Biscotti:
  • 2 cups all-purpose flour  
  • ¾ cup chopped walnuts  
  • ½ teaspoon baking powder  
  • ½ teaspoon baking soda  
  • ¼ teaspoon salt  
  • ¾ cup granulated sugar  
  • 2 eggs  
  • ¼ cup Lurpak® Unsalted Butter, melted  
  • ½ teaspoon vanilla flour for dusting  
  • Eggwash:
  • 1 egg  
  • 1 tablespoon water  
  • Granulated sugar 

What to do:

Preheat the oven to 350°F. Combine the flour, walnuts, baking powder, baking soda and salt. Set aside.

Beat the sugar and eggs until light and lemony. Add the butter and mix well. In small additions, add the flour mixture, scraping down the sides of the bowl often, until well mixed. Turn dough out onto a lightly floured surface. With well-floured hands, shape the dough into 2 (10×2-inch) logs. Place the logs on a baking sheet, 4 inches apart. Combine the remaining egg with the water and brush evenly over the dough. Sprinkle the dough with sugar. Bake until lightly browned, about 25 minutes. Remove and cool for 30 minutes.

Reduce the oven temperature to 300°F. Cut the logs diagonally into 3/4-inch slices. Arrange the slices on a baking sheet and return to the oven. Bake for 5 minutes on each side or until they turn golden brown.
