Orange Sandies

Makes 40 cookies

A sophisticated cookie with a fresh orange flavor! Makes a great gift for someone special.

What you need:

  • 2 cups all-purpose flour  
  • ¾ cup powdered sugar  
  • Pinch of salt  
  • 8 oz (16 Tbs) Lurpak Unsalted Butter, softened  
  • 4 tablespoons orange zest (3-4 oranges)  
  • 1 cup sugar  
  •  
  • Tools:
  • non-stick cookie sheets 

What to do:

  1. Combine flour, powdered sugar and salt; set aside.
  2. With an electric mixer on medium speed, beat butter and orange zest until pale and fluffy. Add flour mixture in two batches, scraping sides of bowl as necessary. Beat just enough to combine and form dough, but do not over-beat.
  3. Divide dough in half. Roll into logs 1 ½-inches thick and 5-inches long. Pour sugar on a sheet pan and roll logs in it, coating evenly. Wrap in plastic wrap and refrigerate for 1 hour.
  4. Preheat oven to 375 degrees. Cut dough into 3/8-inch slices and place on baking sheet. Bake until edges turn light brown, about 12 to 15 minutes. Transfer to a rack to cool.
  5. An 8-oz package of Lurpak® Unsalted Imported Butter = 1 cup (16 tablespoons) or 2 sticks.
