Old Fashioned Apple Cake

Makes 12 servings

Apple cakes are baked along with plenty of stories and lore – the types only achievable during a crisp fall day when time seems to slow. Although each cake is baked with a mother’s special twist or a grandmother’s secret for the warmth, they all depend on a great butter for the flavor.

What you need:

  • For the cake:
  • 6 medium baking apples (Stayman, Empire, or Cortland)  
  • 1 cup raisins  
  • 1 ½ cups plus 3 tablespoons sugar  
  • 2 teaspoons cinnamon  
  • 2 1/2 cups flour  
  • 1 package Lurpak® Unsalted butter, melted  
  • ¼ cup orange juice  
  • 3 teaspoons baking powder  
  • 1 teaspoon baking soda  
  • 1 teaspoon cinnamon  
  • ½ teaspoon salt  
  • 2 teaspoons vanilla extract  
  • 4 eggs  
  •  
  • Baking pan:
  • Angel food cake tube pan, buttered and floured 

What to do:

  1. Preheat oven to 350°F. Peel, core, and chop apples. Toss with raisins, 3 tablespoons of sugar, and cinnamon; set aside.
  2. Combine flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, whisk together the butter, orange juice, remaining sugar, and vanilla. Pour the butter mixture into the flour mixture and blend. Add eggs, one at a time; blend well. Scrape sides of bowl as necessary. Fold apple-raisin mixture into batter.
  3. Transfer batter into prepared baking pan. Bake until cake pulls away from the sides of the pan, about 1 hour and 15 minutes. Cool for 15 minutes in the pan before removing it and transferring to a rack to cool.
