Honey Pecan Squares

Makes 24, 2-inch squares

A shortbread crust lines the bottom of these chewy pecan squares. It’s better than any pecan pie you have ever tried!

What you need:

  • For the cookie crust:
  • 2 cups flour  
  • 1/3 cup granulated sugar  
  • ¼ teaspoon salt  
  • 1 teaspoon baking powder  
  • ½ package Lurpak Unsalted butter  
  • 2 eggs  
  •  
  • For the filling:
  • ¾ cup Lurpak Unsalted butter  
  • ¾ cup brown sugar  
  • 3 tablespoons honey  
  • 2 tablespoons heavy cream  
  • 3 cups pecan pieces  
  •  
  • Baking pan:
  • 9x13x2-inch baking pan lined with buttered parchment 

What to do:

  1. Prepare the crust: Combine flour, sugar, salt, and baking powder in the bowl of a food processor. Pulse several times to combine. Add butter and pulse until mixture becomes a fine grain. Add eggs and pulse until dough forms a ball.
  2. On a lightly floured surface, roll out the dough into a 9 x13-inch rectangle. Transfer the dough to the prepared baking pan. Gently press the dough evenly around the bottom of the pan and ease it up the sides creating a 1-inch rim. Refrigerate until ready to fill.
  3. Prepare filling: Preheat oven to 350°F. Combine the butter, brown sugar, honey, and salt in a saucepan. Bring it to a simmer and cook until sugar dissolves. Pour in the cream and return mixture to a boil. Remove from heat and add pecans. Cool for 15 minutes before pouring the filling evenly into prepared crust.
  4. Bake until filling bubbles and crust is golden brown, about 30 minutes. Transfer to a rack to cool completely before cutting into 2-inch squares.
  5. Tip: Store in airtight containers for several days or freeze.
