What you need:
- For the cookie crust:
- 2 cups flour
- 1/3 cup granulated sugar
- ¼ teaspoon salt
- 1 teaspoon baking powder
- ½ package Lurpak Unsalted butter
- 2 eggs
- For the filling:
- ¾ cup Lurpak Unsalted butter
- ¾ cup brown sugar
- 3 tablespoons honey
- 2 tablespoons heavy cream
- 3 cups pecan pieces
- Baking pan:
- 9x13x2-inch baking pan lined with buttered parchment
What to do:
- Prepare the crust: Combine flour, sugar, salt, and baking powder in the bowl of a food processor. Pulse several times to combine. Add butter and pulse until mixture becomes a fine grain. Add eggs and pulse until dough forms a ball.
- On a lightly floured surface, roll out the dough into a 9 x13-inch rectangle. Transfer the dough to the prepared baking pan. Gently press the dough evenly around the bottom of the pan and ease it up the sides creating a 1-inch rim. Refrigerate until ready to fill.
- Prepare filling: Preheat oven to 350°F. Combine the butter, brown sugar, honey, and salt in a saucepan. Bring it to a simmer and cook until sugar dissolves. Pour in the cream and return mixture to a boil. Remove from heat and add pecans. Cool for 15 minutes before pouring the filling evenly into prepared crust.
- Bake until filling bubbles and crust is golden brown, about 30 minutes. Transfer to a rack to cool completely before cutting into 2-inch squares.
Tip: Store in airtight containers for several days or freeze.
