Devil’s Food Cake with Old Fashioned Boiled Icing

What you need:
- For the cake:
- 2 ½ cups cake flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ package of Lurpak Unsalted butter (1/2 cup)
- 2 cups brown sugar
- 3 ½ ounces bittersweet chocolate, melted
- 3 eggs
- ½ cup sour cream
- 2 teaspoons vanilla
- 1 cup boiling water
- For the boiled frosting:
- 3 egg whites
- 1 cup granulated sugar
- 1/3 cup corn syrup
- Pinch of salt
- Baking pan:
- 10-inch non-stick cake pan, buttered and with parchment lining over bottom of pan
What to do:
- Make the cake: Preheat oven to 350°F. Sift flour, baking soda, and salt; set aside. Beat butter and sugar until light and creamy, about 5 minutes. Beat in chocolate, then eggs one at a time. Continue beating until light and creamy.
- Alternately add the sour cream and flour mixture, mixing well after each addition. Scrape the sides of the bowl as necessary. Add vanilla and boiling water to batter and slowly blend smooth. Transfer the batter to prepared cake pan and bake until firm, about 45 minutes. Cool in the pan for 10 minutes before removing and transferring to a rack to cool completely.
- Make the icing: Combine egg whites, sugar, and corn syrup in a mixing bowl. Place over a pot with simmering water and whisk until mixture is hot and sugar has dissolved. Beat with an electric mixer until white, fluffy, and cool. Spread frosting over sides and top of the cake.
