Chocolate-Dipped Stars

What you need:
- 8 ounces (16 tablespoons) Lurpak® Unsalted Imported Butter
- 1/2 cup sugar
- 2 teaspoons vanilla
- 3 egg yolks
- 2 1/2 cups cake flour, sifted
- Egg Wash: 1 egg, beaten with pinch of salt
- For dipping chocolate:
- 1 pound of good-quality bitter sweet or semisweet chocolate
- Tools:
- 2 cookie sheets or jelly-roll pans lined with parchment
What to do:
- Using an electric mixer on medium speed, beat the butter until very soft. While the mixer in running on low, slowly stir in the sugar and vanilla. Increase speed and cream the mixture for 5 minutes, until it is very light and fluffy. Add the yolks, one at a time, beating thoroughly after each addition until the mixture is smooth.
- 2. Divide the cake flour into thirds. Add one third at a time to the butter mixture, pulsing the mixer on the lowest speed until the flour is absorbed. Mix the dough just long enough to absorb the flour into the batter. Over-mixing it will toughen the cookies!
- Transfer the dough to a sheet of plastic wrap and wrap tightly. Refrigerate for 30 minutes, or until dough firms up.
- Set racks at the upper and lower thirds of the oven and preheat to 325°F.
- On a floured work surface, roll the dough to 1/4″ thickness. Score the dough by dragging the tines of a fork across the surface and then brush it with egg wash. Using a star-shaped cutter, press out the cookies and place them on the prepared pans.
- Bake for until lightly golden, about 14-15 minutes. Cool the cookies on baking pans before transferring them to a cooling rack.
- Melt 2/3 of the chocolate over a water bath or in 15-second intervals in the microwave. Remove from heat and add remaining chocolate; stir until completely melted. Dip half of each cookie into the chocolate and return to the cooling racks until the chocolate firms.Store in airtight containers until ready to serve or package as gifts for the holiday.
