What you need:
- For brownies:
- 1 1/8 cups Lurpak Lighter Spreadable
- 8 oz dark chocolate (minimum 70% cocoa content)
- 4 large eggs
- 2 tsp vanilla extract
- 1 1/2 cups sugar
- 2 cups plain flour sifted with a pinch of salt
- 6 oz dark chocolate chips
What to do:
- Preheat oven to 325°F. Line bottom of a non-stick baking pan (9x9x2-
inches) with parchment paper. - Melt the butter and chocolate in a saucepan over a low heat, set aside and cool.
- Meanwhile whisk eggs and sugar in a bowl until light and fluffy. Mix in the chocolate mixture and then stir in vanilla.
- Fold flour and salt into chocolate mixture. Stir in chocolate chips and stir though.
- Transfer batter to the baking pan and bake for approximately 25 minutes. To check for doneness: pierce the surface with a knife – you want a little bit of steam or batter on the blade as the brownies will continue to cook once they out of the oven.
