Carrot Raisin Cake

What you need:
- 2/3 cup Lurpak® Unsalted Butter
- 1 ⅓ cups sugar
- 3 eggs
- ½ teaspoon vanilla
- 2 cups all-purpose flour
- ¾ teaspoon baking baking powder
- 1½ teaspoons ground cinnamon
- ¾ teaspoon grated nutmeg
- ¼ teaspoon ground cloves
- pinch salt
- 1 cup finely shredded carrots
- ¾ cup raisins
What to do:
Preheat the oven to 325º F. Butter a 9 x 5 inch loaf pan and coat with white sugar.
In a large bowl, cream the butter and sugar until light and creamy. Add the eggs one at a time, beating well after each addition, and then stir in the vanilla. Reserve 1/4 cup of flour for later. Sift the remaining flour with the baking powder, cinnamon, nutmeg, cloves and salt. Gradually stir the flour mixture into the creamed butter. Toss the reserved flour with the carrots and raisins and stir them into the batter. Spread the batter evenly into the prepared pan and bake until a toothpick or cake tester inserted into the center comes out clean, about one hour.
Cool in the pan on a wire rack for about 10 minutes before moving the cake out onto the rack to cool completely.
