Butter Bite Biscuits
Made with Lurpak®® and with true Southern style, these light, savory, bite-sized biscuits serve up a whole lot of buttery goodness. Whether you prepare these for breakfast or dinner, a warm biscuit with melted Lurpak®® is simple – and irresistible!

What you need:
- For biscuits:
- 1 cup all-purpose flour, plus extra for rolling
- 1 cup cake flour (or 2 cups of old-fashioned southern biscuit flour if you can get it)
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 4 Tbsp Lurpak® Lightly Salted, chilled and cut into ¼ pats
- 3/4 cups milk
What to do:
- Preparation: Preheat the oven to 450°, and use the center oven rack. Before mixing, melt 4 Tablespoons Lurpak®®. Pour into a cup so butter is at least 1” deep. Prep baking sheet with baking paper or foil. Wash hands in cold water and dry thoroughly.
- For the biscuits: In a large mixing bowl, combine the two flours very gently with your fingers, removing any lumps. Add baking powder and baking soda and stir with your fingers. Drop in the cold Lurpak®® butter pats and cut the butter into the flour with hands or a pastry cutter or two knives. Do not use a mixer – easy does it! You want to get it to the consistency of cornmeal. Make a well in the center of the flour mixture and pour in the milk. With one finger, stir gently until combined. Keep it on the wet side – add a bit more milk if needed. Do not overwork it. If you feel the dough toughening, refrigerate for 10 minutes, then continue.
- Wipe excess dough off your hands and flour them lightly. Roll dough into 1-1 ½” balls, setting them aside until all dough is used. With a spoon, drop each into cup of melted Lurpak®® butter to coat, and transfer to baking sheet, 2” apart.
- Bake for 12 to 14 minutes, depending on your oven, until light brown. Watch carefully – they’re smaller than usual, so don’t let them burn.
SERVING: Serve warm with more Lurpak®®!
STORAGE: Because Lurpak®® butter has a higher moisture content, these biscuits will stay fresher and moister longer than your other baked goods – this is a great recipe to make ahead before a picnic or gathering!
